I am SO excited about this week's Publix run. I had a great week of coupons, and the sales certainly didn't hurt, either!

Here is the haul!

  • 1 quart grape tomatoes
  • 2 bananas
  • 1 French's Spicy Brown Mustard
  • 1 French's Deli Mustard
  • 1 Mrs. Dash Original Blend
  • 2 10oz Sabra Hummus
  • 16 oz. split peas
  • 14 oz broccoli florets
  • 2 bottles Welchs sparkling grape juice
  • Tropicana Orange Juice
  • 2 canisters Quaker Old Fashioned Oats
  • 1 Gallon milk
  • 1 bags Stacy's Multigrain Pita Chips
  • 8 14oz cans of Hunt's Diced Tomatoes
  • 1 tub Plain Dannon Yogurt
  • 16 oz Breakstone Sour Cream
  • 1 doz Egglands Best Eggs
  • 2 containers Kraft Olive Oil Mayo
  • 2 bags Pretzel Crisps
  • 2 jars Mount Olive Baby Kosher Dills
  • 1 can Chick Peas
  • 1 can Mushroom Pieces
  • 2 boxes Triscuits
  • 2 boxes Wheat Thins
Total Retail Value: $97.77

Dilled Carrots

Dilled Carrots:

This is one of my favorite ways to eat carrots. I surprised my hubby with it one evening and we have been eating it constantly ever since!


Ingredients:

  • 1 lb carrots
  • 1 Tbsp salted butter
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp dried dill
Method:
  • Peel and slice carrots on a bias (fancy way of saying make them oval instead of round by cutting on a slant instead of straight up and down).
  • Simmer carrots in saucepan for approximately 10 minutes or until crisp tender.
  • Drain carrots and return to pan.
  • Add butter to hot carrots and allow to melt and coat.
  • Once carrots are coated, add seasonings and stir to evenly distribute.
  • Enjoy!

Hot Breakfast in a Hurry

It is not terribly difficult to score boxes of cereal inexpensively by combining sales and coupons, but let's face it, cereal is not nearly as satisfying as a hot breakfast.

The most common reason I hear that folks turn to the convenience of cold cereal is that mornings tend to be hectic and hot breakfasts can be time consuming to make.

Check out how just a small amount of advance preparation, your freezer, fridge, and toaster/toaster oven can combine to give you delicious hot breakfasts in no time at all.


Muffins, Pancakes, Quick Breads and Waffles:
There is no need to purchase over priced pastry products. If you whip up a batch, separate them into portion sizeds and stash in your freezer, then you have the ultimate in convenience, taste, and low cost. Most pastries will be tasty in the freezer for up to a month or two. When you are ready to eat, briefly reheat in your microwave or toaster/toaster oven and enjoy!

Oatmeal:

Don't be fooled into the notion that you must buy serving sized packets of instant oatmeal in order to enjoy oatmeal on the go. Just use the regular old fashioned oats (which are on average 7 cents a serving) and pre-soak them to reduce the cooking time. Follow the following method:

  • The night before:
  • Combine in a glass container the following for 2 servings: 1 cup old fashioned oats, 1 cup filtered water, and 2 tsp of lemon juice.
  • Cover with plastic wrap and allow to soak overnight. I usually just leave it covered on my counter, but you could put it in your fridge if you like.
  • The next morning:
  • Add soaked oats to a medium sized saucepan.
  • Add 1 additional cup water and 1 pinch salt.
  • Cook over medium heat, stirring occasionally.
  • While cooking, add raisins and cinnamon if desired.
  • Once you reach desired consistency, remove from heat and sweeten to taste.
This method reduces cooking time by nearly half, and makes it very easy to digest.

Bacon:
If cooked in individual serving sizes, bacon is incredibly time intensive, not to mention, rather messy. Did you know, too, that bacon can be cooked in bulk quickly and without significant mess? Try this method:
  • Preheat your oven to 400 degrees F
  • Lay bacon slices evenly on a broiler pan or baking sheet
  • Allow to bake for 8-10 minutes
  • Drain on paper towels
  • Freeze cooked bacon pieces, layered in a gallon freezer bag with paper towels
  • When ready to eat, reheat briefly and enjoy!

Eggs:

While most of the time it takes to get freshly cooked eggs is from the cook time, you can shave off some time in the morning by doing some advance prep work.
  • Hardboiled eggs-While not techinically a HOT breakfast, hardboiling a half dozen eggs ahead of time allows you to grab a hardboiled egg, reheated waffle, and delicious bacon strips and have breakfast on the table in under 5 minutes.
  • Fried eggs-You don't need to do any advance prep, fried eggs quick very quickly, just crack, fry and go!
  • Scrambled eggs/Omellettes-A simple trick for having scrambled eggs or omelletes is to mix up the egg portion the night before and store the mix in the fridge. Then all you need to do in the morning is add pre-chopped toppings/additions and cook!
  • Quiche-Quiche can be made ahead of time and frozen. Delicious hot or cold, quiche is actually a very nutritionally balanced breakfast treat. Pair it with a fruit cup and you'll feel like you are at a fancy brunch!
Now, tell me, don't these yummy alternatives have cereal beat all hollow?

Zucchini Chicken

Ingredients
  • 2 boneless, skinless chicken breasts, cut into bite sized pieces
  • 1 quart chicken broth or stock
  • salt and fresh ground pepper to taste
  • 5 medium carrots, peeled and cut into rounds
  • 3 medium zucchini, chopped
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 2-3 stalks celery (with leafy tops), chopped
  • Cornstarch (optional)
  • Brown Rice (prepared according to package directions)
Method
  • Begin cooking rice in saucepan.
  • In a large, high sided saute pan, bring broth and chicken to a simmer at medium heat.
  • Allow chicken to braise until opaque, approx 3-4 minutes.
  • Add carrot, onion, garlic, and celery and allow to simmer for 5 more minutes.
  • Add zucchini and cornstarch (if desired to thicken broth)
  • Allow to simmer approximately 5 more minutes, or until sauce is of desired thickness and zucchini is at desired doneness.
  • Salt and pepper to taste.
  • Serve in bowls over brown rice.
  • Enjoy!

Now, on the flip side, I need your honest critiques. What baby items have you found to be a waste of space or money. After all, those baby registry lists make it seem like you need a million different accessories for your little sweetheart, but I know better than that!

Meatloaf Supreme

Meatloaf Supreme

Me and my hubby love this meatloaf recipe. It is deliciously moist, not at all like that dry lunchroom meatloaf that you may remember from your childhood.

Ingredients

  • 1 to 1 1/2 lbs ground beef
  • 3/4 to 1 cup old fashioned oatmeal
  • 1/2 a medium yellow onion chopped
  • 1 beaten egg
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 Tbsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 1/2 Tbsp prepared spicy mustard
  • 1 8 oz can tomato sauce
Method
  1. Preheat oven to 350 degrees
  2. Mix all ingredients thoroughly in a bowl
  3. Press mixture into a standard loaf pan (glass preferred if possible)
  4. Cover pan with aluminum foil and place in the oven for 1 hour to 1 hour 15 minutes.

As you may remember, if you have been reading recently, we are expecting a tiny homemaker boy or girl in the late spring.

But, being a first time mom, I have lots to learn. And because I want to be frugal about my purchases, I thought I would come to you, my dear readers and ask for some suggestions.

Would you please leave me some comments, telling me what the one (or more) baby things that you just couldn't do without? If you have brand names or links, that would be great too!

In fact, once I hear from you, I'd like to put together a post with a "best of" recommendation list for other moms out there looking for ideas.

Top 5 of 2008

2008 marked the beginning of The Homemaker's Resource. While we have only been active since May, I feel like we have covered a lot of ground.

What started out as a way for me to keep track of my bargains and deals morphed into a resource for local families looking to do some of the same things that I was doing. From that the audience expanded to families across the country, and in some cases, across the world! What a tremendous opportunity.

So, I looked through the archives and selected 5 of my favorite posts. Take a moment or two to relive some of the moments, with me, if you will.

  1. The beginning of the $20 grocery challenge, where we spent only $20 on groceries 3 weeks out of the month for several months.
  2. Always looking for ways to save money, and reduce our chemical load, I posted some great cleaning tips using inexpensive and safe cleaning formulas made at home.
  3. After some great CVS deals, I offer my perspective on bargain hunting competitiveness.
  4. Based on my personal experience, I also offered some advice to those looking to begin saving more money.
  5. Another area that I am working on, but shared my ideas for, is saving on clothing.
